Blueberry muffin

225gm plain flour

2  1/2 tsp baking powder

1/4 tsp salt

100gm castor sugar

1egg

240ml milk

45ml corn oil

40gm butter(melted/room temp)

blueberry filling

method

-prepare muffin tins with 9 pcs of paper cups/big cups

-preheat oven to 190C

-sift flour,baking powder,salt and sugar

-in another bowl beat egg with a fork and stir in milk,oil and butter.

-pour the wet ingredient into dry ingredient.stir just until batter is combined

-fill muffin cups half full,put some blueberry filling on top and then finish with remaining batter

-bake for 20-25 mins.
